For quality classification, our Vietnamese cashew nuts are classified according to its general appearance and condition, as follows:
Extra Class
Cashew kernels in this class must be of superior quality. Specifically, their color must be white, pale ivory, pale ash-grey, or light yellow. All of the cashew kernels must be whole, uniform in size and shape.
For defects, they must be practically free from defects with the exception of very slight superficial defects are allowed, provided these do not affect the overall appearance and quality of cashew nuts.
These cashew kernels are designated as Whole, or W in short.
Class I
The quality of cashew kernels in class I must be good with the color of light brown, light ivory, yellow, or light ash-grey as a result of over-heating
These cashew kernels are designated as Scorched Whole
Class II
Cashew nuts that do not meet the required quality standards for higher classes above but are free from insect and pest damages will be classified in this class. Their color may be of deep brown, amber, or light to deep blue.
These cashew kernels are designated as Scorched Seconds.
General features of our Cashew nuts W240
When the harvesting time comes, our Vietnamese farmers will separate the drupe from the cashew apple to put them into sun-drying. These raw cashew nuts will then be unshelled to obtain the cashew kernels. All these steps will take place under clean, hygienic, and ideal conditions to ensure the quality requirements and avoid contamination of the cashew nuts.
Our Cashew nuts W240 have met the required standard for superior quality, and been classified as in the extra class. They are all in white-ish color and whole without any broken ones.
Processing of cashew nuts W240 production
- Stage 1: Heat treatment: The application of direct heat, hot oil or steam, prepares the raw cashew nuts W240 for shelling and facilitates removal of the shell.
- Stage 2: Shelling and peeling: The hard shell is either cracked or cut to expose the kernel with testa for separation from the shell. The testa of the cashew kernel has to be removed after shelling. As a result, the white kernels are obtained after removing the shell and the testa.
- Stage 3: Grading: The final stage of the primary processing process is the classification of kernels. For our cashew nuts W240, only cashew nuts that are in whole, white-ish in color, and medium in size would be selected for packaging.

After grading, the cashew nuts are stored in containers according to grades and labeled for identification. The maintenance of the ideal moisture content is achieved by either drying or humification to reach the required moisture content. Then, they are all fumigated before final packaging to prevent infestation by arthropod pests and pathogenic organisms.
